A Make-Ahead Brunch Menu for a Relaxed Morning

A brunch menu you prep the night before. Overnight cinnamon rolls, a cheddar herb strata and yeasted waffles, with a timeline so everything is ready together.

Illustrated pan of iced cinnamon rolls arranged in neat rows

The secret to hosting brunch is doing almost nothing on the morning itself. Every recipe here is designed to be prepped the night before, so in the morning you’re mostly turning on the oven and making coffee.

The timeline

The night before: make and shape the cinnamon rolls, assemble the strata, and mix the waffle batter. Everything goes into the fridge, except the waffle batter if your kitchen is cool.

90 minutes before guests arrive: take out the rolls and strata. Heat the oven to 350°F (175°C).

60 minutes before: strata into the oven. Rolls go in when they’re puffy.

At the table: whisk the eggs into the waffle batter and cook waffles to order while the strata rests.

  1. 1. 11 hrs 40 mins

    Overnight Cinnamon Rolls

Shape them after dinner and they rise slowly in the fridge overnight. In the morning they need an hour on the counter and half an hour in the oven.

  2. 2. 9 hrs 30 mins

    Cheddar & Herb Breakfast Strata

The savory centerpiece. It soaks overnight, bakes alongside the rolls at the same 350°F (175°C), and feeds eight.

  3. 3. 8 hrs 45 mins

    Overnight Yeasted Waffles

Mix the batter at night. In the morning, add two eggs and cook them at the table while the oven does the rest.

  4. 4. 1 hr 10 mins

    Lemon Buttermilk Scones

Shape them days ahead and freeze. They bake straight from the freezer while the strata rests.
