“Healthy” means different things to different people, and we’re not dietitians. These are simply the breakfasts we turn to when we want more whole grains, fruit and protein and less added sugar, without giving up the pleasure of baking.

Each one keeps well, so you can bake once and eat well all week. As always, every recipe has gram weights, and the nutrition estimates are listed on each recipe card.

  1. 1. 50 mins

    Banana Oat Breakfast Muffins

Flourless, butter-free and sweetened mostly with ripe bananas. Everything goes in the blender, and they freeze beautifully for weekday mornings.

  2. 2. 45 mins

    Spinach & Feta Frittata

Fourteen grams of protein a slice, naturally gluten-free, and just as good cold from the fridge. It's our favorite Sunday meal-prep breakfast.

  3. 3. 1 hr

    Maple Apple Baked Oatmeal

Whole-grain oats, fresh apples and only a third of a cup of maple syrup for the whole pan. Assemble it the night before and bake while the coffee brews.

  4. 4. 50 mins

    Pumpkin Spice Muffins

Made with oil, so they're dairy-free, with a vegetable you can actually taste. Swap in white whole wheat flour for half the flour to add fiber.
